1 cup chocolate chips, and other toppings if desired
Nutella, or other spreadable filling if desired.
Directions
1) Preheat the oven to 325oF.
2) Cream together butter, sugar and brown sugar until fully incorporated, about 2 minutes.
3) Add the eggs and vanilla and mix until fully combined, about 30 seconds.
4) Add the flour, baking soda, and salt and mix, scraping the sides of the bowl to ensure the mixture is fully combined. Then fold in 3/4 of the chocolate chips. Set dough aside.
5) Line the bottom of a spring form pan (or other circular baking pan) with parchment paper. Spray the sides with cooking spray.
6) Take 2/3 of the cookie dough and spread evenly along the bottom of the pan and line the sides about half way up (similar to a pie crust). Then add your filling on top of the cookie dough layer in the pan. Then take the remaining 1/3 cookie dough and begin to flatten with your hands in a separate plate/board, this will be the top layer. Once flattened, add the top layer into the pan and pinch together the sides with the top to connect the layers. Top with the remaining 1/4 chocolate chips and any other toppings.
7) Bake for 23-28 minutes or until the sides look a nice golden brown. The center may appear slightly undercooked, that is okay. Cool completely in the pan before removing and serving, about 30 minutes.
